That sounds like a good dressing, cookeatread. I find 1/2 red wine vinegar and 1/2 lemon juice is really appetizing. Don't forget to get good feta cheese. I buy it at Trader Joe's. It is unbelievable how bad grocery store feta cheese is. And if you can ever get fresh oregano, it is soooo good!

I like this one:

1/2 cup olive oil
1-1/4 teaspoons garlic powder
1-1/4 teaspoons dried oregano
1-1/4 teaspoons dried basil
1 teaspoon pepper
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon Dijon-style mustard
2/3 cup red wine vinegar

Mix all ingredients together in store in the fridge when not using!
