How do you think restaurants will change in the next 20 years

Less experience and more product. Restaurants used to be about more than just what was on the plate, and slowly over the past 200 years, we've evolved from Antoine Careme to Applebees. Nothing wrong with that, but I think more people tend to see frivolity in grande cuisine than usefulness. More people also eat out on a daily basis than ever have before. I know people in their 30's who have never cooked a meal in their life. They tend to frequent take out joints and fast casual dining. I cook at home at least 6 nights a week, so when I want a RESTAURANT, I want something unique, dynamic, visually appealing and thoughtful. I don't think that will ever go away, but it will become more of a novelty. People also favor quantity over quality. I can't tell you how many people complain about the SIZE of product at the bakery I work at than anything else.

I also think delivery is the way of the future. More and more, "fine dining" restaurants are making food that suitable for travel with services like GrubHub and Seamless and I think that industry will grow. I heard an interview with a food historian who predicts that grocery stores are going to shrink and rely more on delivery.

Really hard to predict...so much of past futurology (predictions of what would come to pass) has failed to materialize.
To focus,
1) are you talking first world or third world or all?
2) what is now missing from the restaurant experience that you would like to see add, and think can be made to happen?
3) think of the whole system that supports restaurants - agriculture, distribution, real estate, staff training, consumer preference. Then, where and how do you first envision likely changes? From that first step, ask if the other elements can support the change?

Many already have changed with computers on the tables for ordering and paying.
While you wait you can order a game to play online with everyone at the table guess conversation is out the window.
