I'm imagining you could take cooked chicken strips, cut them up into smaller pieces, and wrap it in chilled biscuit dough with just a bit of cheese and caramelized onions on top of the chicken piece before you wrap it. Then, I'd brush each piece with a little bit of butter & honey (maybe a sprinkle of salt) and bake until the biscuit dough is golden brown (start at 375 degrees?).
Alternatively, perhaps you could take the cut pieces of chicken strips, caramelized onion, and cheese and create a filling to bake like a hand pie?

I would use cooked chicken and maybe blanched onions, wrap with cheese in biscuit dough and then bake as directed for the biscuit. Usually biscuits are baked at a high temp, ~450F, and a very short time, ~10-15 mins, depending on size. So thechicken has to be precooked. Raw chicken strips would not cook to safe temp in that amount of time, wrapped in biscuit dough. If you cook longer, the biscuit will be over-cooked.
As long as they are cooked, I would assemble like a breakfast sandwich. I'm sure you can find recipes for that. Bake the biscuits and split them. Then, assemble and heat to warm and melt the cheese.
