Can I prep sweet potato biscuits in advance, and then freeze then before baking?

I want to prep them tonight, freeze them, and bake on Thursday

YES! Biscuits bake great from the freezer - just remember you may need to add a bit to the baking time. If you notice they are browning too quickly, knock your oven temperature down 25-ish degrees towards the end of baking, too to prevent burning!
