to prep make ahead mashed potatoes can I just build potatoes and refrigerate overnight?

I add cream cheese if I'm making them ahead of time and then bake them the day of. They stay super creamy and delicious.

You can definitely make your mashed potatoes ahead of time, just forgo any finishing touches like a pat (or two) of butter, a drizzle of olive oil, or a sprinkle of salt. Once they're cool, cover them tightly with plastic wrap or in a well-sealed container. Then when you're ready to serve them, heat them in 1 minute increments in the microwave, stirring after each turn. If you're finding them too dry or thick, add some milk or broth to loosen them up. When they're warmed through to your desired temperature, finish with any butter, cream, olive oil, and/or salt and pepper to serve.
