Help! I need a sauce to go with Gammon, have a relative coming that needs a sauce to help them swallow properly any ideas?

I would make a simple pan sauce from the drippings. Maybe add some shallots, chicken stock and reduce to desired consistency.

Not knowing anything about the tastes of your dinner table guests, I'm not sure if adding alcohol (red wine, port wine, sherry, or something else) would be enjoyed by them.

What else are you serving? It might help us settle on a direction for a sauce.
