My cake came out really sweet, so I wish to have the mirror glaze not as sweet, I was wondering if I can replace the water in a mirror glaze recipe with cold filtered coffee?
Yes but it will not likely reduce sweetness...just add a slightly bitter taste note.
To keep the visual effect but reduce total sweetness in the dessert, make half the amont of glaze specified and dribble/paste over cake.
Or make full recipe, serve cake this time in very small pieces, and reduce sugar in cake next time.
