I have a question about the recipe "Quinoa–Red Lentil Risotto with Asparagus & Peas" from Food52. How long do you soak the lentils and quinoa

Hi there! The recipe didn't state how long to soak, but our test kitchen simply rinsed both ingredients really well and the texture turned out great. Hope you enjoy cooking it!

Lentils don't generally need to be soaked. Red ones are particularly soft. I would just rinse them. Same for the quinoa.
