almond bread

Hi, just made some almond bread in a stainless steel bread pan. Bread seems to have turned out find, however, there is a green (pistachio actually) hue on bottom of the bread, the green areas kinda feel like cooked egg white..... here are ingredients: 1/4 c almond butter, 4 eggs, pinch of salt, 1 t baking soda, non stick cooking spray for pan. I made this the other day in a NON stainless steel bread pan (It is metal) and there was no green. Interesting, but puzzling. Thoughts? Assume it's okay to eat? It has a great consistency...... THANK YOU!

I agree, it is puzzling. Were the ingredients thoroughly blended? I find with some recipes that I really have to be careful to scrape down to the bottom of the mixing bowl to be sure all the ingredients get stirred in, especially with the bowl for the electric mixer. Have you used the pan before with no problem?

Hi, thank you for your interest -- I have used the pan before with no problems -- my stainless steel bread pans are my "go to" pans. It IS possible that I did not thoroughly whisk together the ingredients -- and very likely I did not beat the eggs before I added the almond butter and other ingredients. Bread seems just fine, but, GREEN on bottom? Any other thoughts? THANK YOU!
