How to make my breading stick to the food I deep fry

Traditional method is three parts.
1. Dredge in all purpose flour
2. Dip in egg wash (just an egg whisked)
3. Dredge in panko bread crumbs
This adheres pretty well. Then you can take liberties on the three steps depending on what you’re frying. For example, coconut shrimp you may use rice flour or cornstarch for step 1. Then egg wash for step 2. Coconut flakes for step 3.
