Should I use Meyer Lemons, which are in season now, for this recipe or stick with regular lemons?

I have made a similar recipe three different ways depending on what I had on hand -- with lemons, Meyer lemons, or oranges - all equally delicious! Sponge custard is a great quick dessert for a weeknight dinner, so use what you have. Here on the East Coast, Meyer lemon are hard to come by, so I envy you having them readily available -- wherever you are!
