A question about a recipe: Alice's House Truffles 4.0
I have a question about the recipe "Alice's House Truffles 4.0" from Alice Medrich. I only have 70% and 72% chocolate, will this work here? Normally I'd wing it, but Alice's recipe is so specific...

Thanks for asking, but I am specific for good reason! The recipe would have to be altered to work with the those higher percentage chocolates. If you have a copy of my book "Bittersweet", alterations are given, but I am not in a place where I can look that up for you at the moment. It would be best to get chocolate with the percentage called for in the recipe.
