Hi Meaghan! I’ve never tried this curry in a crockpot, but I think it’ll work nicely! From quickly scanning vegetable-based crockpot curries, most say to cook for 3 to 4 hours on high or 6 to 8 on low. I’d probably lean towards low heat so the coconut milk doesn’t simmer too vigorously. Please report back if you try it this way! Or if others have crockpot curry tips to pass along, please share! : )
