Grill pan recipes

I just received my Staub grill pan in the mail that I ordered through Food52 but I don't know how to use it! I need recipes and how-to's please!

Yay, what a fun start to the weekend! I love using the grill pan to make anything that would ordinarily benefit from being cooked on a grill to the stovetop, including simply charring vegetables (get it nice and hot and char them directly on the surface, on all sides), grilling fruit (e.g. peaches, to scoop vanilla ice cream on top of), and proteins like steak, chicken, pork, etc. Another personal favorite: griddling buttered toast on both sides, to use as the base for browned sweet Italian sausage braised briefly with garlic, kale, a big splash of broth, salt, and lemon juice (bonus points for grating Parm over the top!). The pan works on all cooktops, and you can also use it on an outdoor grill-top if you want to get the smokiness that comes from a grill, without worrying about whatever you're grilling falling through the grates. Yes, it helps a lot, thanks! I've never grilled before (gasp, I know!) but excited to learn how. Just not sure how long to leave chicken, etc, on each side, what to put on it, etc, but I'll look for grilled protein recipes. I love the charred veggies idea too!
