Yay, what a fun start to the weekend! I love using the grill pan to make anything that would ordinarily benefit from being cooked on a grill to the stovetop, including simply charring vegetables (get it nice and hot and char them directly on the surface, on all sides), grilling fruit (e.g. peaches, to scoop vanilla ice cream on top of), and proteins like steak, chicken, pork, etc. Another personal favorite: griddling buttered toast on both sides, to use as the base for browned sweet Italian sausage braised briefly with garlic, kale, a big splash of broth, salt, and lemon juice (bonus points for grating Parm over the top!). The pan works on all cooktops, and you can also use it on an outdoor grill-top if you want to get the smokiness that comes from a grill, without worrying about whatever you're grilling falling through the grates. The Food52 x Staub 2-in-1 Grill Pan & Cocotte and the Staub Round Double Handle Pure Grill Pan are both oven and broiler safe up to 500°F.
Hope this helps!
