How would you make this recipe dairy free?

I think it would be very difficult to make this whole recipe dairy free - because I don't know of a vegetarian replacement that would do instead of the whipped cream in the champagne top layer.
Instead, if you like the flavor combination of peaches and champagne (or prosecco), make the peach layer with a coconut milk or cream and serve the dessert with chilled sparkling wine.
Another way to go, if you want two layers and a mousse on top, is to replace the champagne mousse layer with a vegetarian chocolate mousse (for which there are many good recipes out there).
It would change the dessert, however.
