Hi, what kind of sausage/what seasoning combo is recommended for this if it’s pork sausage?

+1 to Kristen's note that any sausage will be great here. I would probably pick a spicy Italian because that's one of my favorites.

I would just use whatever kind of pork sausage you like - the seasonings in the recipe plus the seasonings in the sausage should provide plenty of flavor without adding anything more. I myself would probably use Italian sausage but lots of other kinds would work just fine as well.
