Should you punch down the dough before putting it in the fridge (for the second proofing)?

Yes, best practice is to degas the dough before refrigeration. Since this is labeled a no-knead recipe, it would definitely benefit from a good stretch-fold to align and strengthen the gluten at the time of "punching" down.
