Cover or not in regular oven? Annoying to have to ask

Since the original recipe is for an instant pot which would be covered and it looks like you want it to be moist and saucy I would say use the cover.

That’s what I thought. However, after the 20 minutes covered it didn’t seem cooked enough. I continued to cook it another 20 minutes uncovered with better results. I don’t think I would make it again anyway.
