What are your least favorite kitchen tasks? The things that make you (almost) not want to cook?

Washing and stemming hearty greens is definitely a top contender, as is breaking down winter squash and assembling pie crust. Also, grating—grating's the worst (goodbye, knuckle skin).

For some reason I hate sectioning oranges - maybe because I suck at it ;). Cleaning up is loathsome too, and also I hate scrubbing the dirt off of farm-fresh root veggies.

Kitchen tasks I hate:

-cleaning off melted chocolate that has hardened. It's like concrete and I make more of a mess in the cleaning than the actual cooking part.
-finely mincing anything. I think I'm missing the gene to do this successfully.
-rolling out dough (pie, cookie, bread, pasta, you name it) to a specific thickness or shape.

cleaning up! especially the pots and pans that don't fit in the dishwasher.

I don't love washing things! Like lettuce or herbs. (Though I don't mind this *as* much since I bought a salad spinner.) And I don't love working with raw meat—I'm always worried about cross-contaminating something else in the kitchen.

I absolutely loathe, detest and HATE trimming the fat and sinew from boneless, skinless chicken thighs prior to freezing.

As much as I love to cook, if I never had to do this one thing again, it would be too soon.
