I have friends who ranch bison, and have therefor used ground bison in ragù for several years with great satisfaction.

Hi! That's a significant swap, so it's hard to say how it would turn out. Here's a ragu recipe that uses ground meat: https://food52.com/recipes/2554-weeknight-ragu. Our co-founder, Merrill, who developed it, calls it a "weeknight ragu"—but I'd just as soon make it for a cozy Saturday or Sunday!
