So, I am making these black bean burgers, but the side dish is thai potatoes (coconut) so I'd like the burgers to perhaps have a thai dressing, or sauce. Something not too overwhelming and fairly simple would be best.

Black bean burgers go well with a hearty potato seasoning, thai or not. You might try well salted baked potatoes (thin sliced) with a sweeter rice wine or white wine reduction. Should be a good contrast.
This is a "Thai-inspired" idea: I recently made a quick salad dressing that started out way too thick, which might be perfect for a bean-burger topping:
Mix 1/4 cup peanut butter with a T. lime juice. Add a pinch of lime zest and a squirt of sriracha. Add a few drops hot water and a pinch of salt.
Keep adding and adjusting former ingredients until you get the taste and consistency you need.
I would have added some ginger juice* in tiny increments to taste if I had it on hand! Chopped cilantro in lieu of lime zest would be good if you like cilantro.
(* grate fresh ginger root over a strainer over a bowl, press grated ginger lightly against strainer with back of spoon to get more juice into bowl)
To make into salad dressing I whirred this in a food processor and slowly added mirin until thin enough to dress greens (with sliced cucumber, bean sprouts and chopped peanuts). My husband was dubious at first but quickly changed his tune . . . Hope this helps.
