Hi Teresa! Yes, add the bay leaves with the other herbs. I corrected the recipe to include this, thanks. The question about oil is a matter of taste: I tend to leave in whatever oil I have but if it seems like too much for you by all means take some out. As long as your pan is not too hot when the onions go in they will release a fair amount of their own liquid and shouldn't stick to the pan.
