Oil instead of butter when making Raspberry Granola Bars

Hi! To make the back to school raspberry granola bars, can I use olive oil (like with the maple granola recipe you have and I love!!) instead of butter?

I think that would work, though I reduce the amount of oil to 2/3 cup and add 2 tablespoons of water. My reason for the water is: commercial butter is 85% fat and 15% water. I suspect that the water in the butter sort of helps the oats, along with the sugar, to stick together. That said, this granola is described as being more on the crumbly side. Try it out and let us know!
