Portabella instead of shiitake?

Hi! Do you think this recipe will work with portabella mushrooms instead of shiitake mushrooms? Thank you!

portabellas will be totally fine! You can scrape out the gills as this other commenter suggested, but since the burgers are already going to be dark I honestly wouldn't bother :)

Sure. I'd suggest using a spoon to scrape out the gills before chopping them up. The gills tend to turn whatever they're used in black.
