Can this be made with half and half?

We don't stock cream in out house, but half and half is always in the fridge. I know the fat content is lower, but would that work as a substitute?

I just tried it bc I had half and half on hand but no heavy cream. I got part of the way there — some of the caramelization but not the full separation of the cream / development of butter that the article mentions. Probably need the higher fat content of heavy cream for that. For mine, i had to cook them longer to get the crispy edge, which meant the yolks were a bit overdone. Will try again though - very promising.
