Hi Molly, I am actually experiencing the exact same dilemma. I picked up a raw turkey on Saturday, and I am planning on cooking it Thursday. I spoke to a few people, all of whom made me feel like this is fine to do. I rubbed my turkey in a dry brine yesterday, and I will leave it uncovered in the fridge overnight on Wednesday (a version of this recipe - https://food52.com/recipes...)
