Our Senior Editor Eric Kim and Nigella Lawson (power couple!) both recommend 13 minutes per pound at 350F. Which translates to about four hours and 15 minutes. Because this recipe starts out at a higher oven temp, and has a slightly higher overall roasting temperature, I would start checking the bird a little earlier.

Ultimately, internal temperature is going to be your best guide. Aim for an internal temperature of 165F in the innermost part of the thigh. It may be helpful to pull it out when the bird reads 160F in these areas, because it will keep on cooking for a while once it leaves the oven.
