Can I skip the mushrooms in this recipe or use another ingredient as a substitute? Mushrooms and I don’t get along very well.

Hi RAD, mushrooms help bring some umami flavor to the cream sauce and round out the dish. However, I think you can sub in either sun-dried tomatoes or some cooked bacon/pancetta. Cooking times will, of course, have to be adjusted accordingly.
