can potatoes be slow roasted with my turkey

I'm slow roasting my turkey overnight... Can the potatoes for mashing be cooked in the same pan? Similar to a roast with potatoes and carrots etc...

Hi Jen! By "overnight," do you mean for 6 to 8 hours, at a really low temp (like 250°F?)? I've never personally cooked potatoes for that long, so I can't expressly recommend going that route, for fear that the potatoes would end up withered and dry (even though the turkey drippings will help keep them slightly more moist). Instead, I'd suggest adding the potatoes a little bit closer to the end of the turkey-cooking process—maybe 2 or 2.5 hours before the turkey is done. I'd also cut the potatoes into bigger chunks than you'd ordinarily cut them—maybe 3-inch cubes (or so)? And then keep an eye on them if possible so they don't get too dry.
