While I don't have any specific recipes (I usually just wing it), one could stuff peppers, zucchini, eggplant, acorn squash, tomatoes, sweet onions, etc, with pretty much anything (meat, rice/grains, more veg, herb, cheese, etc.) and roast them in the oven. Search the internet or, really, just throw some semi-cooked stuff into a halved veggie and roast them together. I say semi-cooked, because ground meats overcook so easily, and you end up with cardboard.
