I don’t eat eggs. Can I swap it out with flaxseed meal ? Will this ruin the cake ?😞

Lavanya, I had great success (during more than 20 yr as a vegetarian) using pureed soft tofu instead of eggs in most baking (same volume, 2 oz tofu for every large egg), including most cakes.
However, I do agree with Joanna's earlier comment that substitutes for egg wouldn't work well in this flourless pecan cake, because it's so stripped down in its number of ingredients and dependent on the eggs.
Suggest you find a more conventional cake recipe where the replacement can work, for example for Thanksgiving, a butter pecan layer cake or coffee cake

Thank you Nancy ! Looks like I may have to find an alternative after all. I’ll check out your suggestions 😊

Hi Lavanya,

Because whipped egg whites are critical to the structure of this cake, I wouldn't advise subbing in flaxseed meal. I know these aren't quite the same, but here are a few of my favorite vegan desserts that you might like!
