Lavanya, I had great success (during more than 20 yr as a vegetarian) using pureed soft tofu instead of eggs in most baking (same volume, 2 oz tofu for every large egg), including most cakes. However, I do agree with Joanna's earlier comment that substitutes for egg wouldn't work well in this flourless pecan cake, because it's so stripped down in its number of ingredients and dependent on the eggs.
