Do the pistachio's need to be unsalted or salted?

Hi Stephanie! Since you're essentially turning the pistachios into a flour, using unsalted vs. salted determines the cookies' overall saltiness. If you only can find salted pistachios, I'd recommend holding back on 1/2 teaspoon salt, tasting the finished dough, and adjusting the salt from there.
