You didn't mention when during the process you wanted to freeze, but there are a couple places when I think the cookies could be frozen. 1.) after Step 2, when the dough is to be chilled in a disc. 2.) after the dough has been rolled out, the cut out shapes could be frozen, then carefully wrapped to bake later. 3.) after the cookies have been baked, but before decorating. I am hesitant to advise freezing after decorating as it is possible that the chocolate drizzle could fall off after freezing.
