I have a question about the recipe "Rigatoni with Sausage, Peas and Fresh Ricotta" from Aliwaks.

Ricotta salata is a firm & tangy sheep's milk cheese. If you cannot find it acceptable substitutes area pecorino romano, French feta, or cotija.
Its comes from ricotta cheese (usually sheeps milk) that has been pressed and salted, its dry and a bit crumbly, but will slice. You can find it in any Italian cheese shop, whole foods, wild oats, fresh fields etc. Manouri is another great substitute, though difficult to
Find unless there a thriving Greek and or cypriot community nearby.
