Its comes from ricotta cheese (usually sheeps milk) that has been pressed and salted, its dry and a bit crumbly, but will slice. You can find it in any Italian cheese shop, whole foods, wild oats, fresh fields etc. Manouri is another great substitute, though difficult to

Ricotta salata is a firm & tangy sheep's milk cheese. If you cannot find it acceptable substitutes area pecorino romano, French feta, or cotija.
