How to make Cold Mac and cheese Creamy

My sons first birthday party is tomorrow and my other half was hoping for a bunch of the cold regular Mac and cheese that are in delis like Safeway and winco, however I would like to make it myself with Alfredo in it but I don’t know how the delis keep the Mac and cheese creamy once it’s cold
