What favorite recipes have you reconstructed to be gluten free with great success?

I have noticed a sensitivity to gluten unless it's sourdough. I have been successful in making cookies that are perfectly delicious, as well as many cakes. I'm looking to expand my repertoire and welcome the opportunity
to hear about your adventures. Grain free even better!

Not as complicated as baking. But quiches, which are retro but I've rediscovered them in the past few months and they are great (as many French recipes are) for using up odds and ends of vegetable and cheese.
Quinoa. Use their crust and either their filling or one you know and like.
