Hello! I'm actually pretty unfamiliar with granulated brown sugar—might work just fine, but it's hard for me to say for sure. Curious to hear if other community members have worked with this ingredient! And I like using a stand mixer here only because otherwise you're doing two things at once: pouring the sugar syrup and stirring the peanut butter mixture (and that sugar syrup is very, very hot—not something you'd want to splash on your skin). That all said, you could certainly adapt it to be mixed by hand; but ideally, this would be a two-person job (with one person slowly pouring the sugar syrup and the other person holding/mixing the bowl). Thank you so much for this, Emma. If I use brown sugar, I'll be sure and report back.

Also thanks for your thoughts about trying it by hand....I'm definitely not sure I have the coordination to pull it off, but I live in a pretty tiny "studio for one" and don't have a built-in helper. (Calling on Eric Kim to write a great piece about how to tackle a two-person job with one person.) **I want that halvah!!**
