Is there any point in making this recipe using what we have, or should I just abandon the idea altogether?

Agree with Stephanie's comments - yes smoked mozzarella would be good in this recipe, and you might want to add some more moisture.
In addition to the recipe she linked for vegetarian pasta with smoked mozzarella, there are tons of others out there...Yummly lists about 3000 (not a typo - yes, 3K)...including sandwiches, salads, pizza, rice balls with it.

I think you can still make the recipe. If you have enough to make extra, maybe layer in a little extra sauce as fresh mozzarella has more water than the drier, smoked stuff. But if you'd really prefer not to mess with it, try an alternative recipe meant for smoked mozzarella, like this one: https://food52.com/recipes... (you can totally sub something a more common mushroom for the black trumpet)
