what would happen if in step 6 (the overnight rest for 8-10 hours) one extended that to 18-24 hours? I

If so would that work better if the overnight rise occurred in the fridge? Trying to fit baking into work schedule

If you extend the rise that long, it'd be best to do it in the fridge! But it should be totally fine--you'll likely end up with a tangier loaf.
