Any other alternative to the fat?

Can’t wait to try this, but was wondering what are the other alternatives to the beef fat?

The recipe author notes that other fat or oil is fine. We used to use a regular neutral oil and it made a very nice tender crust. I would think that safflower, canola or sunflower would work fine.

She does suggest using shortening as an alternative. I went through this with an Argentine from Tucuman and she went through a lot of options and finally settled for lard.
