Using red/yellow/orange peppers?
Do you think substituting other bell peppers would make for a similar experience?

The dish should be equal to or better than the original. Haven't made this particular dish both ways, but I regularly replace green peppers (which are unripened version of same vegetable) with colored peppers (the ripe versions) and get great results.
The green peppers will give you a fresher taste, the colored ones a deeper, richer taste. Both are good.
