Proofing overnight? Will I over proof the loaf?

I always seem to time the process wrong and end up baking at the oddest times of the night. At Step 7 can I have the dough sit/proof longer than 1 1/2 hours? Would overnight be too long?

Instead of proofing it in step six at room temperature, I would recommend proofing it for longer and doing it in the refrigerator. This will not only develop more flavor but will let you control the timing better.
