You state to use unrefined sugar - is it brown or white or does it matter?

Unrefined sugar is naturally a definite tan/light brown color. It has not had the final minerals removed as in white table sugar, nor has it had molasses added as in light or dark brown sugar. You may find it in the baking aisle at your grocery story, or in the "natural foods" section. It could be called unrefined sugar or demerara sugar.
