To clarify on my question below. 17 1/2 oz. is not equal to 3 3/4 cups, yet it says to use either amount. So I'm a bit confused

If you look at the version of this recipe at Serious Eats, it says 500g, 17 1/2 oz or 3 3/4 cups.
Since two out of three agree (metric & imperial weights), I would go with them.

Same three measures that are listed in food52 version.

thank you. I think I was getting confused because on my measuring up the 17 1/2 oz and 3 1/2 cups didn't measure at the same spot. but I the oz aren't liquid oz. so it's different. thanks Nancy
