When doubling the chicken do you double the sauce? (I did and it was A LOT of sauce. Never cooked down to glaze. Still very good taste though).

I would not double the sauce ingredient since you found it to be too much sauce. I would make 1.5 the amount of sauce for double the amount of chicken. It would be less liquid to reduce for the final dish.
