Greetings Karen...get online to find out more. Below is a quick "copy" from The Original Green Pan website...

"3. USING THE COOKWARE

It might seem silly to say, but it is important to remember not to leave an empty pan on a hot burner. To help your pan live a long and healthy life, please avoid using metal utensils or cutting food in your pan. Doing this can create small cuts in the coating where food and oils can get stuck and carbonize. Wooden, silicone or nylon utensils are all great to use with your GreenPan."

Keep in mind that any coating on any pan that is damaged...can end up both in your food and altering how the pan then sticks and cooks into the future.

Also, reach out to the manufacture of your pan and ask for advice...they are the best people to tell you if you should use the pan as is, resurface/where, or offer some other satisfactory answer so that you have piece of mind.

Again, educate yourself about the cooking surface of your pan and then use it accordingly - no metal utensils, how to heat, don't put in the dishwasher, etc. Also, if it's under warranty using a knife in the pan may have voided any replacement of the pan.

I did know not to use sharp things with this pan. It was a very odd accident. A knife slipped out of a helper's hand. Luckily only the pan was hurt.
