Do you put the ribs in the fridge overnight, then serve them cold? It says to reheat the sauce, so would the meat be cold?

Recipe indicates that the short ribs are served hot/warm. I don't see in the instructions to refrigerate overnight, but you can certainly refrigerate overnight and gently rewarm at serving time. Personally, braised short ribs are best served warm.

That’s what I thought but it also says to let the sauce rest overnight then warm it up and put over ribs, so it sounds like this is a make-ahead recipe?

Yes, it does sound like a make-ahead recipe. Braises usually taste better the day after cooking :)
