Questions about the boiled items

You mentioned to fish out the vegetables. What do you recommend doing with them after boiling since they’re so soft now?

Also what do you usually do with the broth?

For the broth - save it a few days in fridge or longer in freezer. Use as a base for another dish, or to cook grains.
For the vegetables - usually exhausted after cooking long time in broth. But if you object to throwing out food, puree and use in a soup.
