Make watermelon syrup to enjoy over ice cream or cake, or agua fresca to drink. You could also use the syrup in mixed drinks, or as a nice spritzer flavoring. It also works for making a gelato, a sorbet, or smoothie. Since it's overripe, it will be plenty sweet- or should be, so you probably won't need as much sugar. Although it's not much good for slicing and eating as is- once you change the format, it will work fine.
